Dining
The philosophy of Las Calas is ?Rediscover Sensations? and that applies most specifically to the sense of taste. The Canarian / Mediterranean cuisine is based on farm-fresh not store-bought food. Vegetables (potatoes, lettuce) and fruit (plums, oranges, apples) are grown in the garden; eggs, milk and other organic products are purchased from farmers in the hamlet.
Magui?s menus for supper are wide?ranging but will usually include the Canarian favourite Papas Arrugadas (wrinkled potatoes), potatoes boiled with their skin in seawater, dipped into two olive oil based sauces: the mojo picón (spicy sauce) and the mojo verde (green sauce). Try the most typical of all Canary dishes, Sancocho Canario, a salt fish and potato stew and finish with local goat cheese or fresh fruit... there'll be plenty more at breakfast.
